Greetings, fellow food fans! Today, I bring you Dave’s (Zhengzheng) delicious Chinese Chicken and Potato Stew recipe.

Why this Recipe Works

When Dave (our former exchange student from Shanghai – who now lives nearby in Minnesota) visits and wants to cook, this recipe from his family in China is at the top of our list. We’ve had it over 30 times. 😂

We love it so much because it’s so flavorful. The more Dave makes it, the more spice he adds because we’ve grown to enjoy that. But initially, he made it very mild. It’s really wonderful either way.

This recipe is so very cozy and comforting. It’s perfect for cooler weather, but we make it year-round. Remember to add Chinese sauteed shrimp and vegetable lo mein noodles to your recipe list to make, also.

Stew is also a healthy meal and perfect for adding in all kinds of nutritious ingredients. Mushrooms, celery, carrots, potatoes, anything goes!

Chicken stew would also be an excellent one-pot dinner party entree. We have doubled the recipe for 16 people more than once. I know your family and friends will love it too!

Ingredients

Below are the main ingredients you need to make this recipe. Check out the recipe card at the bottom for the complete list and exact measurements.

Chicken Thighs

You will need 3 lbs of boneless chicken thighs for one batch. You can add more if you prefer a thicker stew. I usually buy the organic chicken variety in the freezer section at Costco. I have also purchased them in the grocery section at Target or at other local grocery stores. Chicken thighs also work well in these easy chicken enchiladas.

Note: Be sure to look for boneless. It’s ten times faster than cutting the meat off the bone.

We add in all of these nutritious veggies below for a robust and hearty stew but add in all of your favorites that we missed.

Spices and Flavorings

We use all the spices below in the recipe. Most of these are available at a regular U.S. grocery store, except for the last three items.

You can find the last three ingredients at an Asian grocery store, or I have also included a link if you want to purchase from Amazon.com. (affiliate links included below)

Light Beer (Coors Light or similar)
Anise
Red chilies
Bay leaves
Light soy sauce
Dark soy sauce
Chinese rice cooking wine
Broad Bean Sauce

Variations

Play around adding or swapping out the vegetables that you love. We love celery and mushrooms, but carrots and sweet potatoes would be an interesting addition, too.

Add hearty fresh herbs such as bay leaves at the beginning of your cooking.

Toss in your more delicate herbs, such as green onions or parsley, towards the end of cooking to hold up and maintain their flavor.

What to Serve with Stew

When serving, stews can stand alone, but they are even more deliciously served over a carb, such as rice, mashed potatoes, polenta, or noodles.

We love this Chicken and Potato Stew recipe over rice, cauliflower rice, or with Chinese LoMein.

What is the Difference Between Stew and Soup?


Both stew and soup are dishes that contain a mixture of meat or fish and vegetables cooked in liquid. The main difference between these two hearty meals is the amount of liquid that is used in each. Stew commonly contains less liquid than soup. Stew combines coarse cuts of meat, fish, and slow-cooked vegetables in a minimum amount of liquid, transforming into a flavorful gravy. Vegetables such as beans, carrots, mushrooms, onions, peppers, potatoes, and/or tomatoes are commonly used.

Do potatoes thicken stew?

Yes, potatoes can act as a natural thickening agent in a stew. When cooked, they release starch into the broth. This starch has a thickening effect, which helps to give the stew a heartier and thicker consistency.

Can you overcook a chicken stew?

Yes, it is possible to overcook chicken stew. Overcooking can make the chicken dry and tough, and the vegetables may become mushy. It’s important to monitor the cooking time and temperature to avoid overcooking stew. Heat until the chicken is fully cooked and tender and the stew flavors have melded together.

Equipment

When the weather cools down, there is nothing better than mixing up a big batch of hearty stew; bonus, you do not need many tools to do it! It only requires a cooking vessel, a sharp knife, a cutting boards, and a large spoon or spatula.

Dutch Oven/French Oven

My favorite is my Le Creuset enameled Dutch oven, sometimes referred to as a French oven. It is excellent for making soups and stews, although you can also use it for braising and frying, too. Contains affiliate links.

Ingredients

Scale

23 tablespoon oil

4 star anise, whole

3 dried red chilies, coarsely chopped

3 bay leaves

46 green onions, sliced, reserve 1/4 for garnish

chunk of ginger (18 g or 5/8 oz), coarsely chopped

6 garlic cloves, coarsely chopped

3 lbs chicken thighs, boneless, skinless, cubed

6 tablespoons light soy sauce

3/4 tablespoon of dark soy sauce

1 tablespoon Chinese rice cooking wine

1.5 tablespoons Sichuan Style Broad Bean Sauce, recommended

one 12 oz can light beer, Coors Light or similar, or water

3 russet potatoes, cut into 3/8 inch chunks

1 package of mushrooms, sliced

1 red onion, coarsely cut

1/2 teaspoon of sugar

salt, to taste

Instructions

Prepare all veggies you are using. Coarsely chop red chilies, the (peeled) ginger, and the garlic. Slice the green onion. Peel potatoes and cube, and slice the mushroom and red onion. Cut up the chicken.

Heat Dutch oven over medium-high heat, then add oil. Add the anise, red chilies, and bay leaves. Stir for 1 minute. Remove from pan and discard. Add 3/4 of the green onion, ginger, and garlic. Cook until fragrant, about 30 seconds. Be careful not to burn. Add in chicken pieces and pan-fry until meat turns white.

Add light soy sauce, dark soy sauce, Chinese rice cooking wine, and Sichuan Style Broad Bean Sauce. Mix and stir for another 1-2 minutes. Add one can of light beer (or substitute water) and bring to a boil.

Next, add the potatoes and mushrooms. Stir to incorporate. Cover and boil potatoes until tender over high heat.

Next, add onions and stir. Cook for another 3-4 mins; add sugar and salt to taste.

Garnish with the remaining green onions before serving. Serve over steamed rice or cauliflower rice. Enjoy!

Notes

Celery optional. We used to add celery (when these pics were taken), but often leave it out.

Broad Bean Sauce. This ingredient is available at most Asian grocery stores.
